Matured in ex-Bourbon cask with a Maple Finish
Despite the cancellation of DARK MOFO due to COVID-19 we want to share a small part of what would have been our contribution to the 2020 Winter Feast.
This limited release single malt whisky has spent 3-years in small American oak ex-bourbon casks, before being transferred to finish for 18 months in a 200L ex-bourbon cask used to mature maple syrup.
Sweet biscuit crumb and slightly burnt marshmallows, creamy vanilla, juicy fruits, baked apple streudel cake, toffee, ginger, chicory and light pantry spice.
A bold opening of sweet toffee and warm butterscotch balanced with mature oak, a touch of leather and spice. Rich caramel and buttermilk pancakes, vanilla ice cream and maple syrup with passion fruit candy.
A harmony of sweetness and spice across the palate with subtle oak.
A lingering and satisfying finish with alternating peaks of sweet spices and peppery delights met with celery and cacao nibs.
