FIRST RELEASE – HUNTER ISLAND TASMANIAN POT STILL WHISKY

Created from a mixed grain recipe, distilled three times in copper, and matured in freshly- charred and toasted oak casks, our first release whisky is inspired by the great tradition of Ireland, but is unmistakably Tasmanian.

Limited release of only 110 bottles, each bottle is numbered, signed, and accompanied by an information booklet. It is presented in an elegant, branded, hand-crafted Tasmanian oak box, made by traditional wooden boat-builder, Adrian Phillips who lives and works locally.

Mixed grain bill of: 65% malted barley, 30% raw barley, 5% oats
Matured in first fill 30L port, 125L Heaven Hill bourbon and 30L Oloroso Sherry casks.
Triple Distilled. Non chill filtered

Hunter Island Pot Still Whisky complies with the Irish definition and uses a mash bill of 65% malted barley, 30% unmalted barley and 5% oats. The unmalted barley provides the classic ‘pot still spice’ across the middle of the palate and a deep ‘nuttiness’, while the oats add a creamy mouth feel.

Tasting Notes:

Rich dark fruits and kitchen spices on the nose/ dark chocolate, sweet tobacco with vanilla- caramel highlights, creamy textured mouthfeel / ‘pot still spice’ leaves a finish of freshly-grated ginger

HUNTER ISLAND WHISKY HAS BEEN CREATED FROM A MIXED MASH BILL, HAS BEEN TRIPLE DISTILLED IN COPPER POT STILLS, AND AGED IN HAND-SELECTED OAK CASKS.

SINGLE POT STILL WHISKEY IS A CENTURIES-OLD IRISH CREATION, AND TODAY, IT’S ON THE WAY TO RECLAIMING ITS PLACE AS THE WORLD’S MOST-LOVED DARK SPIRIT.

HUNTER ISLAND TASMANIAN POT STILL WHISKY IS OUR TASMANIAN INTERPRETATION OF IRELAND’S SIGNATURE DRAM, AND AN OPPORTUNITY TO SHOWCASE TASMANIA’S EXCELLENT INGREDIENTS.

Hunter Island has the smoothness wrought by triple distillation, but also a depth of character from the mixed mash bill.

It retains the rich, oily markers of great Tasmanian whiskies, thanks to the brewers’ barley that is widely used and grown here. Our aim is to combine everything that is great about Tasmanian Whisky with this classic Irish style.
