LIMITED RELEASE OLOROSO CASK MATURED
Made by Damian Mackey and dubbed the ‘Black Mack’ by Mr Nick, this is a richly hued and dramatic sherry whisky which delivers wave after wave of flavour. Matured in first fill 30L Oloroso European Oak Casks.
Created from our signature mash bill of malted barley, raw barley and oats, triple distilled, and aged in heavily charred and toasted 30L European Oak Oloroso casks, our latest release is a genuine sherry bomb. Its marmalade nose is powerful and peppery, and the taste is of liquid fruitcake. We’ve cut it to 48% ABV.
A true sherry monster. A flavour bomb of candied citrus and peppery spice. The deep dark appearance delivers just what the colour suggests: an astonishingly big whisky. Glorious stuff!

Hunter Island has the smoothness wrought by triple distillation, but also a depth of character from the mixed mash bill.
It retains the rich, oily markers of great Tasmanian whiskies, thanks to the brewers’ barley that is widely used and grown here. Our aim is to combine everything that is great about Tasmanian Whisky with this classic Irish style.
