Lark's Tokay Tokay Release has spent its entire life surrounded by ex-Australian Tokay, maturing in 100 litre Tokay casks before finishing in two 300 litre Tokay hogsheads from Seppeltsfield in the Barossa Valley. Big and biscuity with sweet notes of vanilla, this is an indulgent affogato of a whisky drowned in espresso with swirls of dark chocolate. A deliciously decadent after-dinner treat.
Nose - A warm summer’s evening sitting on the porch listening to the cicadas sing. The smell of the dry Australian bush is everywhere. Notes of golden raisins, coffee liqueur, roasted hazelnuts, liquorice allsorts, and a hint of garage grease.
Palate - Begins as a bright, sunny, sticky dram of dried pear, Italian plums, burnt butter, and golden syrup, which builds into a strong black coffee, sweetened with leatherwood honey.
Finish - Mellows into a boozy trifle topped with ripe paw-paw and persimmon. The warm honey and coffee notes linger, blending seamlessly with a hint of Tassie highland peat.
