Spanish Sherry at its finest
Pedro Ximénez grapes are laid out in the sun after picking until they are very nearly sultanas. After that the fermentation starts slowly and is halted at the desired point to retain a significant level of natural sugars. The resulting wine ages in for 12 years in contact with the air in Jerez de la Frontera.
Ebony in colour, the aromas and flavours are reminiscent of liquefied figs, sultanas and dates. Generously sweet but far from sickly, velvety and soft on the palate, gorgeously well balanced, with a very long finish.
