1. M&H Apex Dead Sea Matured Single Malt Whisky 55.5% abv - This single malt is the first ever whisky aged in the lowest place on earth, the Dead Sea. Matured at an amazing 423 metres below sea level, with temperatures climbing as high as 50°C, this whisky has matured at an accelerated rate, creating aromas of French vanilla, mocha, cigar box, spearmint and oak that fill the nose. The palate offers notes of black tea leaves, warm spices, cinnamon, coriander seeds, dark cocoa and white pepper throughout the palate, with hints of garden herbs and sea salt lingering in the finish. Matured in American Oak, this whisky is as strong and intense as the conditions under which it was matured in.
2. Elements Sherry Cask Single Malt Whisky 46% abv - recently awarded The World's Best Single Malt for 2023 at the prestigious Whisky Magazine's Global World Whisky Awards. M&H Elements Sherry — aged in both Oloroso and Pedro Ximénez casks. To create this whisky, we travelled all the way to Jerez, Spain to oversee Oloroso and Pedro Ximénez sherry made especially for us. The casks, once filled with quality sherry and seasoned for one year in Jerez, were brought to the distillery to mature our New-Make spirit for a wonderful complex whisky. The M&H Elements Sherry is the first and only single malt whisky in the world, aged in kosher Sherry casks. This single malt reveals robust flavours of red fruit, dark chocolate, and oaky notes.
The Milk & Honey (M&H) Distillery was established in 2014 and is located in Tel Aviv, Israel’s first city and the heart of Israel’s culinary and drinking scene. Located in one of Tel Aviv’s up and coming neighbourhoods, M&H is a part of the city’s fabric, among entrepreneurs and innovators, makers and artisans. They built the distillery in their hometown, alongside the beachfront, the lively markets and the architecture. It is here the owners of the distillery collect their inspiration and passion for their whisky and strive to make world class spirits.
It’s no secret that the climate in the middle east is so hot and dry with an average 300 days of sun recorded each year. The climate is used in this instance to create a whisky which takes on specific terroir and challenges centuries old techniques and traditions. With a minimum of three years maturation the whisky is graceful. The distillery hired the late Dr Jim Swan, one of the world’s most accomplished Master Distillers and an expert in hot climate distillation and maturation, as an advisor. With its own custom made traditional copper still and the use of exceptional barrels which include but not limited to, ex-Bourbon, ex-red wine and kosher sherry barrels the Distillery produces some excellent whisky.
