An Exquisite Collaboration Whisky Event Featuring GlenDronach and Lark
Destination Cellars is thrilled to be collaborating with two of the heavy hitters in the whisky world, offering you a chance to savour a selection of recent rare releases from our friends at Lark Distillery with Head Distiller Chris Thomson, and the latest release of the iconic Sherry Bombs from GlenDronach, on Friday July 29th at 7pm, in the beautiful surrounds of RACV Hobart Hotel.
Lark Distillery has recently been busy with its 30th Anniversary celebrations and has commemorated the occasion with some special releases. Since it was crowned Australian Distiller of the Year in Whisky Magazine's Icons of Whisky Australia 2021 awards, Lark have released a cavalcade of rare and unique whiskies that have caught the eye of industry judges and whisky-lovers alike. At the helm of these releases is Chris Thomson who is at the peak of his powers. Come along and hear the stories of the origins and production of these drams, as well as what makes Chris and his distilling team strive for continued excellence.
The GlenDronach distillery is the second oldest legal whisky producer in Scotland. It has produced a range of sherry matured whiskies, either in Oloroso sherry butts or in a combination of Oloroso and Pedro Ximénez (PX) casks for almost two centuries. Over the past decade it has won the hearts of whisky drinkers all over the world, being recognized for the exceptional quality and value of its single malts and has become a consistent medal winner in international competitions.

1. Lark Rare Cask Glenfarclas Single Malt Whisky 63.2% ABV
Lark's most recent release in their Rare Cask Series, this bottling celebrates the friendship of Bill Lark and John Grant, a bond that would change the landscape of the whisky industry in Australia forever
From Scotland to Tasmania. A piece of history, celebrating a lifelong friendship between John Grant and Bill Lark. It was a phone call that shaped the Australian whisky industry, and helped perfect LARK’s award winning whisky, 30 years on. Lark Rare Cask Glenfarclas, a Tasmanian Single Malt, finished to perfection in Glenfarclas casks.
2. Lark Para 1992 Cask Finish Single Malt Whisky 46.5% ABV
Finished in 1992 Seppeltsfield Para Liqueur Casks. Rich, deep and incredibly complex, born from the character and history of the 30 year casks this single malt whisky was finished in. Synonymous with luxury for more than a century, it’s an honour to commemorate Lark’s 30th anniversary with this collaboration with Seppeltsfield.
3. 'Dark Lark' Limited Release Single Malt Whisky 41.9% ABV
For the Dark Mofo 2022 festivities Lark have released 'Dark Lark' - a whisky that Head Distiller Chris Thomson created for good times in a style that he would like to drink if he was at a festival. Emerging through a misty skied Tasmanian winter, this DARK LARK release opens a portal to our island at the bottom of the world. Matured in Muscat casks, this heady arrangement of light and dark whilst possessing the wild and untamed character of untouched forests. Indulge in dark cocoa drenched with luxuriant fruits, delving into the guilty pleasures of spun toffee and toasted tobacco.
4. GlenDronach Parliament 21 Year Old Single Malt Whisky 48% ABV
A 21 Year Old Sherry Cask Icon, this batch of Parliament was bottled in July 2021, thus still contains 100% pre-closure stock. GlenDronach's flagship age statement release doesn't last long when available. Aged for a full 21 years in barrels previously containing Sherry, named after the “parliament” of rooks that nest in the trees overlooking the distillery. A wonderfully complex marriage of Oloroso & Pedro Ximénez sherry casks create this iconic sherry bomb whisky.
5. GlenDronach Allardice 18 Year Old Single Malt Whisky 46% ABV
This is one of our all-time favourite drams, and becoming increasingly difficult to attain - the GlenDronach Allardice 18 Year Old (named after the distillery's founder) has been 100% matured in the finest Spanish Oloroso sherry casks. This sublime rich, dark and seductive sherry bomb is truly unforgettable, with Sherry notes so thick you need a knife to cut them!
6. GlenDronach Revival 15 Year Old Single Malt Whisky 46% ABV
Crowned as The Best Whisky of 2020 by the San Francisco World Spirits Competition, The GlenDronach Revival 15 year old Sherry Cask Matured Single Malt Whisky is an expression of critical acclaim, revered by connoisseurs around the globe. After years of slumber, this relaunched expression embodies The GlenDronach signature style of Spanish Oak maturation in fine Pedro Ximénez and Oloroso sherry casks from Andalucía.

7. GlenDronach 11 Year Old 2009 PX Puncheon #2039 Cask Strength Single Malt Whisky 59.3% ABV
A unicorn bottle from 2020, comes The GlenDronach Single Cask Bottling from Batch 18. It's is a celebration of the distillery’s time-honoured mastery. Each cask individually explores the sophistication, powerful intricacy and complex layers of Spanish sherry cask maturation found in every expression of The GlenDronach.
Tickets are $85 per person and must be booked in advance as places are limited. Your ticket includes light snacks and there will be a small allocation of the limited release whisky available for purchase at the event.
